Kale and Cranberry Salad Recipe

Kale has gained popularity because of its great taste and low-calorie count.

One serving of kale is an excellent source of Vitamins K, A, and C. Although often eaten in “chips” (baked in the oven, then sprinkled with salt), kale is also very delicious raw by itself or as a leafy green in a fresh salad, like this one!

Tear off enough kale to cover your plate or bowl, making sure the pieces are bite-sized. Sprinkle dried cranberries and sliced almond on top of kale. Drizzle your favorite vinaigrette onto the kale salad. You can also add a protein such as chicken or fish, or switch out the nuts and fruits with others, like strawberries and pine nuts.
