What Does “Gluten-Free” Really Mean?

By now, most of us have heard of following a gluten-free diet, but a lot of people are still confused by what “gluten” is and what “gluten-free” means. Let’s break it down!

What is gluten?

Imagine biting into a deliciously soft piece of buttered bread. Gluten is a composite of proteins found in wheat, rye, barely, and triticale – a cross between wheat and rye and is what gives bread that pleasing chewy texture. Gluten can be found in many types of foods including pasta, cereal, breads, and other grain-based foods. But it doesn’t end there. Gluten is also found in unsuspecting places, including soy sauce, frozen vegetables, and meat substitutes and even in some dietary supplements and medications. Why are people concerned about gluten?

According to the Office on Women’s Health, 3 million Americans have celiac disease, while many others have non-celiac gluten sensitivity. Individuals with celiac disease, non-celiac gluten sensitivity, and wheat allergies may experience discomfort when they consume gluten. This may include bloating, gas, abdominal pain, intestinal issues, dehydration, and fatigue. In some, there may also be an association with poor absorption of vitamins and minerals.
