No-Bake Coconut and Cacao Bites Recipe

These bites combine two of our favorite flavors for a sweet and satisfying snack that’s gluten-free, grain-free, paleo, and oh-so-good.

Ingredients

2 cups organic unsweetened shredded coconut
1 cup raw almond flour
3 tbsp organic raw cacao nibs
Pinch salt
¼ cup extra virgin coconut oil (in solid form)
3 tbsp raw manuka honey
Dash vanilla extract

Directions

  • Combine all ingredients in a large mixing bowl.
  • Knead with hands until the dough sticks together.
  • Form into 1-inch balls, placing them in a single layer of a large, flat storage container.
  • Seal the container and place in the refrigerator for 1 hour to chill before serving.

Makes approximately 24 bites.
