Preheat oven to 375 degrees, and grease a cookie sheet with cooking spray.
Slice sweet potatoes lengthwise into sticks (about ½ inch wide), and put them into a large Ziploc bag. Add maple syrup, coconut oil, and coconut sugar to the bag. Seal the bag and shake until all of the fries are coated.
Spread out the fries evenly on the cookie sheet. Bake for 40 minutes, flipping the fries halfway through. Note: Cook time may have to be adjusted depending on your oven.
Makes two servings.
