Easy Every Time Baked Sweet Potato Fries

17-PP-1111-SOCIAL-fries We all need a no muss, no fuss side dish to rely on for fast weeknight dinners, and these sweet potato fries fit the bill.


2 medium sweet potatoes, peeled
2 tablespoons organic 100% pure maple syrup
3 tablespoons extra virgin coconut oil, melted
½ teaspoon coconut sugar
Dash of salt
Cooking spray


Preheat oven to 375 degrees, and grease a cookie sheet with cooking spray.

Slice sweet potatoes lengthwise into sticks (about ½ inch wide), and put them into a large Ziploc bag. Add maple syrup, coconut oil, and coconut sugar to the bag. Seal the bag and shake until all of the fries are coated.

Spread out the fries evenly on the cookie sheet. Bake for 40 minutes, flipping the fries halfway through. Note: Cook time may have to be adjusted depending on your oven.

Makes two servings.

    sound great, bet you could use squash instead. also a small amount (1/4 teas.?) chili pepper, or flakes to spice it up a little. or you could use it in the sour cream or ranch dressing dipping sauce. I now use coconut oil anytime I pan fry meat (after a quick spray of buttery flavor spray). glad I found you (on amazon/ puritan pride site) carol
