The more the weather heats up outside, the more I crave less-heavy foods, like fresh fruits and vegetables. I find myself eating salads nearly every day now, which helps to keep me cool, while not hurting the waistline. (Another plus for swimsuit season!)
I love the combination of apples and cheese, so I decided to put them together in salad form, using low-fat ingredients. The outcome is a refreshing and delicious salad that includes fruits, vegetables and dairy all in one meal.

Apple & Cheddar Salad
1/2 small apple (any apple will do), thinly sliced
2 tsp lemon juice
1 stalk celery, diced
1 oz low-fat cheddar cheese, cut into small cubes
2 tbsp reduced-fat mayonnaise
4-5 large lettuce leaves, torn
1. Place apple slices in a small bowl, then toss with lemon juice.
2. Add celery, cheese, and mayonnaise, then toss to coat.
3. Serve on lettuce leaves and season to taste.
